Republic Latin Fusion is a restaurant, bar & lounge that focuses on creating unforgettable culinary experiences using quality ingredients, attention to detail, and top-notch service. We draw our inspiration from the culinary diversity of Latin America and fuse it with unique twists and flavors from Asia.
“Being from both Peruvian and Puerto Rican descent, the dishes come right from the heart. The menu is very personal to me because these are the flavors I grew up with and learned to cook with by watching my mother and father cook. I later grew a passion for Asian cuisine by working in kitchens like Morimoto, Nobu, Qi, and Spice Market.” - Executive Chef
“Republic’s beverage program reflects our passion for classic cocktails, a love for creative craft cocktails, and tireless dedication to spirits and their culture to bring the best out of each drink. Using freshly squeezed juices, in-house syrups, infusions, and knowledgeable staff we aspire to provide unforgettable experiences for all guests.” - Beverage Director Christian Almonte

I went here for my 35th birthday dinner with 7 other family members. Our reservation was for 10:00pm on a Saturday. We didn't get seated until almost 10:30pm. The waitress came over and told us the kitchen was closing soon so we needed to hurry up and order. Our first waitress was really nice but she told us she was going on break and another waitress would be taking care of us. The second waitress was terrible. I ordered a mango margarita and it took over 20 minutes for her to come to the table and take my drink back. The mango margarita was too sour so I didn't like it. She grabbed the drink and never asked if I wanted something else. The waitress did NOT check back on us at all. We had to hunt other servers down to get utensils and condiments. When we finally got the waitress attention to order more drinks they took forever to come from the bar. We had to call the manager over to let him know how poor the service was. At the end of the meal, the restaurant had no to go containers to take our leftovers home. Overall, it was an awful experience. I would not go back (0/10 recommend)! The restaurant itself was nice. The atmosphere was great. I liked the music. The food was good. However, the service was horrific and cancelled anything good this restaurant had going for it.
Had a reservation for 5:15pm, arrived at 5pm and it was BUSY! The bar was packed and many people were waiting. We didn't get seated at a table for about an hour but luckily there was a DJ who kept us entertained. The vibes were cool and we sure had an appetite. Yohanny was our waitress and took our order right away. We ordered some appetizers and truffle fries. My husband would've liked the chicharron to be a little crispier. The empanadas were good but a very small portion. The truffle fries were very good! All of the appetizers came out pretty quickly and our entrees followed short after. I tried both of our entrees. The lomo saltado was very filling! I had to take some to go. The Peruvian rice was filling as well but a little too salty for me. We enjoyed our meals and the drinks were really good as well. It's a nice place for a date night! I'd like to try more of the appetizers or the brunch if we return!
